    not as greasy. wonderful variety of flavors. not much fat. dairy products only visible at western-style breakfasts, normally. lots of vegetables. sweet & sour pork very different from the american version.

    fred's comments about the varying success of western fast-food chains, and that they had adapted their menus to chinese palates. same in reverse i suppose. what if i want american american food and chinese chinese food? only in chinatown, i suppose.

    about a week into the trip, a few people (many of the same people who had trouble adapting to chopsticks) were getting tired of chinese food and expressing dreams of burgers and pizza. though i was also happy to return to those things when back on american soil, i never got tired of chinese food while in china. partly because they were taking us to really good restaurants (mostly). there were always a large number of dishes to choose from.
